Our Story
1231 Craft Kitchen began with husband and wife duo, Tyler and Rebecca Baggett, and a wonderful partnership with Travis and Niki Fields.
Tyler first made his mark in the restaurant industry when he was just 18-years-old. He quickly worked his way up the ranks, and before he knew it, he had gained 8 solid years of managerial experience. During this time, he became good friends with Travis Fields (owner of FH Beerworks), who convinced Tyler and Rebecca to branch out in the industry.
Before they knew it, they were quitting their jobs and settling into a food truck next to FH Beerworks. It was a risk, of course. But it was a risk they were excited to take. But there was just one problem: They still needed a chef.
They had two potential candidates lined up, one of which was Cory — an old friend whom Tyler had met during his time at Black Eyed Pea. Cory had all the qualifications they were looking for, plus the palette and the passion. And when they needed his talent most, Cory was there.
Now, Tyler, Rebecca, and Cory all run 1231 Craft Kitchen as both business partners and best friends. Thanks to the creativity of Cory, the three of them have raised the bar for street tacos in Colorado Springs, and they plan on sharing their passion for many more years to come.
